材料及份量:中筋粉(Plain flour /all-purpose flour)250g、發粉(baking powder)2g、食用梳打粉(baking soda / bicarb of soda)2g、鹽(salt)4g、油(oil)8g、清水(water)150g 做法:粉類混合加鹽拌勻,分次加入清水混合後加入油搓至光滑不黐手(約數分鐘),蓋好保鮮紙待鬆弛2至3小時。 取出麵糰壓平切條狀,將兩片麵條重叠,兩面中央輕壓出條紋,炸時輕輕拉長麵條,以150°c油温炸至兩面金黃色熟透。 PS:炸時
